Upon successful completion of this course, the student is able to understand basic cooking principles and apply them through the standardized recipe and menu. Effective and efficient managerial skills for the commercial or institutional kitchen will be presented and practiced. (3 hrs. lecture, 3 hrs. laboratory.) |
